- 1/4 cup all-purpose flour
- 1 medium onion, finely chopped
- 2 cups chicken broth
- 2 cups whole milk
- 1 teaspoon Dijon mustard
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 8 ounces sharp cheddar cheese, shredded
- 1/4 cup heavy cream
- Melt the butter in a large saucepan over medium heat.
- Add the chopped onion and cook until soft, about 5 minutes.
- Whisk in the flour to create a roux. Cook for 1 minute, stirring constantly.
- Gradually whisk in the chicken broth until smooth.
- Bring the mixture to a simmer, stirring until the sauce thickens slightly.
- Reduce the heat to low. Slowly whisk in the milk, Dijon mustard, salt, and pepper. Heat through, but do not boil.
- Remove the saucepan from the heat. Gradually add the shredded cheddar cheese, stirring until completely melted and smooth.
- Stir in the heavy cream. Taste and adjust seasoning if needed.
