Make tender crockpot beef tips with rich, savory gravy using your slow cooker. This easy recipe delivers a hearty, comforting family dinner that tastes like it took hours to prepare.

  • 2 pounds beef stew meat (or chuck roast cut into 1-inch pieces)
  • 1 packet (1 oz) dry onion soup mix
  • 1 packet (1 oz) dry ranch seasoning mix
  • 1 can (10.5 oz) condensed cream of mushroom soup
  • 1 can (10.5 oz) condensed cream of celery soup
  • 1 cup beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon garlic powder
  • 1/2 teaspoon black pepper
  • 1/4 cup cornstarch
  • 1/4 cup cold water
  • Egg noodles or mashed potatoes, for serving

Instructions

  1. Place the beef stew meat into the basin of your slow cooker.
  2. Sprinkle the dry onion soup mix and dry ranch seasoning mix evenly over the beef tips.
  3. In a separate bowl, whisk together the cream of mushroom soup, cream of celery soup, beef broth, Worcestershire sauce, garlic powder, and black pepper until smooth.
  4. Pour the soup mixture over the beef in the slow cooker. Stir gently to coat the meat.
  5. Cover the slow cooker and cook on LOW for 7 to 8 hours or on HIGH for 3 to 4 hours, until the beef tips are very tender.
  6. About 30 minutes before serving, mix the cornstarch and cold water in a small bowl to create a slurry. Stir the slurry into the gravy in the slow cooker.
  7. Increase the slow cooker setting to HIGH (if it was on LOW) and cook uncovered for 15 to 20 minutes, stirring occasionally, until the gravy thickens to your liking.
  8. Serve the tender crockpot beef tips and gravy over hot egg noodles or mashed potatoes.

Notes

  • For an extra rich flavor, you can sear the beef tips in a hot skillet with a little oil before adding them to the slow cooker. This step is optional but adds depth.
  • If you prefer a thinner gravy, reduce the amount of cornstarch slurry you add, or skip it entirely and serve the dish as a rich broth.
  • This recipe is great for set it and forget it dinners; just make sure your slow cooker is set correctly before you leave for the day.
