Easiest Tender Crockpot Beef Stew

Make incredibly tender beef stew with minimal effort using your slow cooker. This recipe is perfect for a hearty, comforting meal.

  • 2 lbs beef chuck, cut into 1-inch cubes
  • 1 tablespoon olive oil
  • 1 large onion, chopped
  • 3 carrots, peeled and thickly sliced
  • 3 celery stalks, thickly sliced
  • 4 medium potatoes, peeled and cubed
  • 4 cups beef broth
  • 1/2 cup dry red wine (optional)
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 bay leaf
  • 1/4 cup all-purpose flour
  • Salt and black pepper to taste

Instructions

  1. Pat the beef cubes dry with paper towels. Season generously with salt and pepper.
  2. Heat olive oil in a large skillet over medium-high heat. Brown the beef in batches on all sides. Do not overcrowd the pan. Remove the browned beef and place it in the slow cooker insert.
  3. Add the chopped onion, carrots, and celery to the slow cooker.
  4. In a separate bowl, whisk together the flour with a small amount of the beef broth until smooth.
  5. Pour the remaining beef broth, red wine (if using), Worcestershire sauce, thyme, rosemary, and bay leaf into the slow cooker. Stir well.
  6. Whisk the flour mixture into the liquid in the slow cooker until no lumps remain.
  7. Cover the slow cooker and cook on LOW for 7 to 8 hours or on HIGH for 3.5 to 4 hours, until the beef is fork-tender.
  8. Add the cubed potatoes during the last 1.5 hours of cooking time.
  9. Remove the bay leaf before serving. Taste and adjust seasoning if needed.

Notes

  • For extra tender beef, ensure you brown the meat well before adding it to the slow cooker.
  • If you skip the wine, substitute it with an equal amount of beef broth.
  • If the stew is too thin at the end, mix 1 tablespoon of cornstarch with 2 tablespoons of cold water and stir into the hot stew. Cook on high for 15 minutes until thickened.
