Learn how to make truly crispy Southern Fried Okra using a simple buttermilk and cornmeal dredging method. This easy recipe delivers golden-brown perfection every time, eliminating the slime factor.

Ingredients

Scale
  • 2 lbs fresh okra, sliced into 1/2-inch rounds
  • 1 cup buttermilk
  • 1 cup all-purpose flour
  • 1/2 cup fine yellow cornmeal
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon paprika
  • Vegetable oil, for frying

Instructions

  1. Prepare the okra: Wash the okra well and pat it completely dry with paper towels. Slice the okra into 1/2-inch rounds. This step helps remove surface moisture, which contributes to sliminess.
  2. Set up the dredging station: In one shallow bowl, pour the buttermilk. In a second shallow bowl, whisk together the flour, cornmeal, salt, pepper, garlic powder, and paprika.
  3. Coat the okra: Dip the dried okra slices into the buttermilk, ensuring they are lightly coated. Let the excess drip off for a moment.
  4. Dredge the okra: Transfer the buttermilk-coated okra immediately into the flour mixture. Toss gently until every piece is thoroughly coated with the dry mixture. Press lightly to help the coating adhere.
  5. Heat the oil: Pour vegetable oil into a large, heavy-bottomed skillet to a depth of about 1 inch. Heat the oil over medium-high heat until it reaches 375 degrees Fahrenheit (190 degrees Celsius). Use a thermometer for best results.
  6. Fry in batches: Carefully add the coated okra to the hot oil, ensuring you do not overcrowd the pan. Overcrowding lowers the oil temperature and results in soggy okra.
  7. Cook until golden: Fry the okra for 3 to 5 minutes, turning occasionally, until it is deeply golden brown and crisp.
  8. Drain: Use a slotted spoon to remove the okra from the oil. Place the fried okra on a wire rack set over a baking sheet or on a plate lined with paper towels to drain excess oil.
  9. Serve immediately: Season lightly with a pinch of salt immediately after removing from the oil. Serve your crispy fried okra hot as a side dish or appetizer.

Notes

  • For the crispiest result, let the coated okra sit for 5 minutes before frying. This allows the coating to set up.
  • If you prefer an air fryer method, toss the coated okra lightly with cooking spray and air fry at 400 degrees Fahrenheit for 10-12 minutes, shaking halfway through.
  • If you are using fresh okra, soaking the sliced okra in a mixture of 1 cup water and 1 tablespoon vinegar for 15 minutes before drying can help neutralize the mucilage (slime).
