  • 4 cloves garlic, minced
  • 1/2 cup sun-dried tomatoes, drained and chopped
  • 1/2 cup dry white wine or chicken broth
  • 1 1/2 cups heavy cream
  • 1/2 cup chicken broth
  • 1/2 cup grated Parmesan cheese
  • 2 cups fresh spinach
  • 1/4 teaspoon dried Italian seasoning

Instructions

  1. Pat the chicken breasts dry. Season both sides with salt, pepper, and garlic powder. If you want a thicker sauce, lightly dredge the chicken in flour, shaking off any excess.
  2. Heat the olive oil and butter in a large skillet over medium-high heat. When the butter foams, carefully place the chicken in the skillet. Sear for 5 to 7 minutes per side until golden brown and cooked through (internal temperature reaches 165°F). Remove the chicken from the skillet and set it aside on a plate.
  3. Reduce the heat to medium. Add the minced garlic and chopped sun-dried tomatoes to the same skillet. Cook for about 1 minute until the garlic is fragrant.
  4. Pour in the white wine or chicken broth to deglaze the pan, scraping up any browned bits from the bottom. Let this simmer and reduce by half, about 2 minutes.
  5. Stir in the heavy cream and chicken broth. Bring the sauce to a gentle simmer. Cook for 3 to 5 minutes, stirring occasionally, until the sauce begins to thicken slightly.
  6. Stir in the grated Parmesan cheese and Italian seasoning until the cheese melts smoothly into the sauce. Taste the sauce and add more salt or pepper if needed.
  7. Add the fresh spinach to the sauce. Stir gently until the spinach wilts down, which takes about 1 to 2 minutes.
  8. Return the cooked chicken breasts to the skillet, nestling them into the rich cream sauce. Spoon some sauce over the tops of the chicken.
  9. Simmer for 2 more minutes to heat the chicken through. Serve immediately with your favorite sides.

  • For an Olive Garden inspired flavor, use a pinch of dried oregano along with the Italian seasoning.
