2 lbs boneless, skinless chicken breasts
1 (15 ounce) can cannellini beans, rinsed and drained
1 (15 ounce) can Great Northern beans, rinsed and drained
1 (4 ounce) can diced green chilies, undrained
1 (10 ounce) can diced tomatoes with green chilies, undrained
1 cup chicken broth
1 (10.5 ounce) can cream of chicken soup
1 (4 ounce) can chopped green chilies
1 teaspoon ground cumin
1/2 teaspoon dried oregano
1/4 teaspoon garlic powder
Salt and black pepper to taste
1 cup shredded Monterey Jack cheese
1/2 cup sour cream (for topping)
Instructions
Place the chicken breasts in the bottom of your slow cooker.
Add the cannellini beans, Great Northern beans, diced green chilies, tomatoes with green chilies, chicken broth, cream of chicken soup, cumin, oregano, and garlic powder to the slow cooker.
Stir all ingredients together gently.
Cover the slow cooker and cook on low for 6 to 8 hours or on high for 3 to 4 hours.
Remove the chicken breasts and shred them using two forks. Return the shredded chicken to the slow cooker.
Stir in the shredded Monterey Jack cheese until melted and the chili is creamy. Season with salt and pepper.
Serve hot, topped with a dollop of sour cream.
Notes
For a thicker chili, remove about 1 cup of the liquid before adding the shredded chicken and whisk it with 1 tablespoon of cornstarch. Return the mixture to the slow cooker and cook for 15 minutes until thickened.
If you prefer a spicier chili, add 1/4 teaspoon of cayenne pepper with the other spices.
Shredded rotisserie chicken can replace the raw chicken breasts for a faster preparation time.
