1 pound pasta (linguine or fettuccine work well)
1 tablespoon olive oil
2 tablespoons unsalted butter
1 pound cremini mushrooms, sliced
4 cloves garlic, minced
1/2 teaspoon dried thyme
1/2 cup dry white wine (optional, substitute with broth)
1 1/2 cups heavy cream
1 cup vegetable broth
1 cup grated Parmesan cheese, plus more for serving
1/2 teaspoon salt, or to taste
1/4 teaspoon black pepper, or to taste
2 tablespoons fresh parsley, chopped for garnish
Instructions
Cook the pasta according to package directions until al dente. Reserve about 1 cup of the starchy pasta water before draining. Set the drained pasta aside.
While the pasta cooks, heat the olive oil and butter in a large skillet over medium-high heat.
Add the sliced mushrooms to the skillet and cook, stirring occasionally, until they release their moisture and begin to brown, about 6 to 8 minutes.
Add the minced garlic and dried thyme to the mushrooms. Cook for 1 minute until fragrant. Do not let the garlic burn.
If using, pour in the white wine and let it simmer, scraping up any browned bits from the bottom of the pan, until the liquid is almost completely reduced, about 2 minutes.
Pour in the heavy cream and vegetable broth. Bring the mixture to a gentle simmer and cook until the sauce thickens slightly, about 3 to 4 minutes.
Reduce the heat to low. Stir in the grated Parmesan cheese until the sauce is smooth and creamy. Season with salt and pepper.
Add the cooked pasta to the skillet with the sauce. Toss everything together to coat the pasta evenly. If the sauce seems too thick, add a splash of the reserved pasta water until you reach your desired consistency.
Serve immediately. Top each serving with extra Parmesan cheese and fresh parsley.
Notes
For a richer flavor, use chicken broth instead of vegetable broth.
If you want to add spinach, stir in 2 cups of fresh spinach during the last minute of cooking the sauce until it wilts.
