Ingredients
Scale
2 cups cooked, shredded chicken breast
1 cup low-fat cottage cheese
1/4 cup celery, finely chopped
1/4 cup red onion, finely chopped
2 tablespoons fresh dill, chopped
1 tablespoon Dijon mustard
1 teaspoon lemon juice
Salt and black pepper to taste
Instructions
Place the cooked, shredded chicken in a large mixing bowl.
Add the cottage cheese, chopped celery, chopped red onion, fresh dill, Dijon mustard, and lemon juice to the bowl.
Use a fork or a hand mixer on low speed to combine the ingredients. Mix until the cottage cheese breaks down slightly and creates a creamy binder around the chicken. Do not overmix; you want some texture remaining.
Season the salad generously with salt and black pepper. Taste and adjust seasonings as needed.
Chill the chicken salad for at least 30 minutes before serving to allow the flavors to meld.
Notes
For a smoother texture, blend the cottage cheese briefly in a food processor before adding it to the chicken.
Add 1/4 cup of chopped grapes or dried cranberries for sweetness, or chopped walnuts for crunch.
Serve this salad in lettuce cups for a low-carb option, or on whole-grain bread for a sandwich.
