Make a quick and creamy coconut lime chicken in one skillet. This recipe delivers bright, tropical flavor perfect for a fast weeknight dinner.

  • 1.5 lb boneless, skinless chicken breasts, cut into 1-inch pieces
  • 1 tablespoon olive oil
  • 1 small yellow onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon grated fresh ginger
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes (optional)
  • 1 (13.5 oz) can full-fat coconut milk
  • 1/2 cup chicken broth
  • 1/4 cup fresh lime juice (about 2 limes)
  • 1 tablespoon cornstarch mixed with 2 tablespoons cold water (slurry)
  • 1 tablespoon fresh cilantro, chopped, for garnish

Instructions

  1. Season the chicken pieces with salt and pepper.
  2. Heat the olive oil in a large skillet over medium-high heat. Add the chicken and cook until browned on all sides, about 5 to 7 minutes. Remove the chicken from the skillet and set aside.
  3. Reduce the heat to medium. Add the chopped onion to the skillet and cook until softened, about 3 minutes.
  4. Add the minced garlic and grated ginger to the skillet. Cook for 1 minute until fragrant.
  5. Pour in the coconut milk and chicken broth. Bring the mixture to a gentle simmer.
  6. Stir in the fresh lime juice and red pepper flakes, if using.
  7. Whisk the cornstarch slurry and slowly pour it into the simmering sauce, stirring constantly until the sauce thickens slightly, about 1 minute.
  8. Return the cooked chicken to the skillet. Simmer for 2 to 3 minutes until the chicken is heated through and coated in the sauce.
  9. Remove from heat. Garnish with fresh cilantro before serving over rice or with a side salad.

Notes

  • This recipe is naturally gluten-free and dairy-free when using full-fat coconut milk.
  • For a richer flavor, use chicken thighs instead of breasts. Adjust cooking time as needed.
  • Serve this dish immediately over hot jasmine rice or with steamed broccoli.
