  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup granulated sugar
  • 1 teaspoon ground cinnamon
  • 1/2 cup unsalted butter, melted
  • 1 large egg
  • 1/2 cup milk
  • 1 teaspoon vanilla extract
  • 1/4 cup brown sugar (for topping)
  • 1 tablespoon ground cinnamon (for topping)

Instructions

  1. Preheat your oven to 375 degrees Fahrenheit. Line a 12-cup muffin tin with paper liners or grease well.
  2. In a large bowl, whisk together the flour, baking powder, baking soda, salt, granulated sugar, and 1 teaspoon of cinnamon.
  3. In a separate medium bowl, whisk the melted butter, egg, milk, and vanilla extract until combined.
  4. Pour the wet ingredients into the dry ingredients. Mix gently with a spatula until just combined. Do not overmix; a few lumps are fine.
  5. In a small bowl, mix the brown sugar and the remaining 1 tablespoon of cinnamon for the topping.
  6. Fill each muffin cup about two-thirds full with batter.
  7. Sprinkle a generous amount of the cinnamon sugar topping over the top of each muffin.
  8. Bake for 16 to 18 minutes, or until a toothpick inserted into the center comes out clean.
  9. Let the muffins cool in the tin for 5 minutes before transferring them to a wire rack to cool completely.

Notes

  • You can use slightly stale bread cubes mixed into the batter for a texture closer to traditional baked French toast.
  • For a richer flavor, use whole milk or buttermilk in place of regular milk.
  • If you prefer a glaze, whisk 1/2 cup powdered sugar with 1 tablespoon of milk and drizzle over cooled muffins.
