1.5 lbs boneless, skinless chicken breast, cut into 1-inch cubes
1/4 cup soy sauce
1/4 cup honey
2 tablespoons rice vinegar
1 tablespoon minced fresh ginger
2 cloves garlic, minced
1 teaspoon sesame oil
1/2 teaspoon black pepper
Wooden or metal skewers (soak wooden ones for 30 minutes)
Instructions
In a medium bowl, whisk together the soy sauce, honey, rice vinegar, ginger, minced garlic, sesame oil, and black pepper to make the marinade.
Place the cubed chicken into the marinade, toss to coat completely, and cover. Refrigerate for at least 30 minutes, or up to 4 hours.
If grilling, preheat your grill to medium heat (about 375°F). If using the oven, preheat to 400°F (200°C). If using an air fryer, preheat to 380°F (195°C).
Thread the marinated chicken pieces onto the prepared skewers, leaving a small space between each piece.
For grilling: Grill the skewers for 10-12 minutes, turning every 3-4 minutes, until the chicken is cooked through and lightly charred.
For oven baking: Arrange skewers on a baking sheet lined with foil. Bake for 15-18 minutes, flipping halfway through.
For air frying: Place skewers in a single layer in the air fryer basket (work in batches if necessary). Cook for 10-12 minutes, flipping halfway through.
Serve the chicken skewers immediately.
Notes
Reserve about 2 tablespoons of the marinade before adding the raw chicken; you can boil this reserved portion for 1 minute to use as a simple glaze after cooking.
For extra flavor, brush the skewers with a little extra honey during the last few minutes of cooking.
Serve with rice or a simple green salad for a complete meal.
