12 ounces egg noodles
2 cups cooked, shredded chicken (rotisserie works well)
1 (10.5 ounce) can cream of chicken soup
1 (10.5 ounce) can cream of mushroom soup
1 cup milk
1 cup frozen peas and carrots mix
1/2 cup chopped celery
1/2 cup chopped onion
1 teaspoon dried thyme
1/2 teaspoon black pepper
1 cup shredded cheddar cheese
1/2 cup crushed butter crackers (like Ritz)
3 tablespoons melted butter
Instructions
Preheat your oven to 375 degrees Fahrenheit. Lightly grease a 9×13 inch baking dish.
Cook the egg noodles according to package directions until al dente. Drain well and set aside.
In a large bowl, combine the cream of chicken soup, cream of mushroom soup, milk, peas and carrots, celery, onion, thyme, and pepper. Stir until fully mixed.
Fold in the cooked, shredded chicken and the drained egg noodles into the soup mixture.
Pour the entire mixture into the prepared baking dish. Sprinkle the shredded cheddar cheese evenly over the top.
In a small bowl, mix the crushed butter crackers with the melted butter. Sprinkle this topping evenly over the cheese layer.
Bake for 25 to 30 minutes, or until the casserole is bubbly and the topping is golden brown and crisp.
Let the casserole rest for 5 minutes before serving.
Notes
For a richer flavor, substitute one can of soup with homemade white sauce.
You can prepare this casserole entirely, cover it, and refrigerate it for up to 24 hours before baking. Add 10 minutes to the baking time if baking directly from the refrigerator.
Use leftover cooked chicken or a store-bought rotisserie chicken to save preparation time.
