Instructions

  1. Prepare the cauliflower: Remove the leaves and thick core from the head of cauliflower. Cut the florets into medium pieces.
  2. Make the rice: Place the cauliflower florets into a food processor. Pulse in short bursts until the cauliflower resembles grains of rice. Do not over-process, or it will become mushy. Alternatively, use a box grater to grate the florets.
  3. Cook the rice: Heat the olive oil in a large skillet over medium heat. Add the minced garlic and cook for 30 seconds until fragrant.
  4. Add the cauliflower rice to the skillet. Sauté, stirring frequently, for 5 to 7 minutes until the rice is tender but still has a slight bite. Avoid overcrowding the pan; cook in batches if necessary to ensure it steams less and browns slightly.
