Make a quick, low-carb version of fried rice using cauliflower rice. This recipe is ready in 20 minutes and works well with chicken, shrimp, or beef.

Ingredients

  • 1 tablespoon avocado oil or sesame oil
  • 1 cup diced onion
  • 2 cloves garlic, minced
  • 1 cup diced carrots or mixed frozen vegetables
  • 1 pound protein of choice (diced chicken, shrimp, or beef), or 2 eggs scrambled
  • 1 (10 ounce) bag frozen or fresh cauliflower rice
  • 2 tablespoons low-sodium soy sauce or tamari
  • 1 teaspoon toasted sesame oil
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon white pepper
  • 2 green onions, sliced, for garnish

Instructions

  1. Heat the avocado or sesame oil in a large skillet or wok over medium-high heat.
  2. Add the diced onion and cook for 3 minutes until softened. Add the minced garlic and cook for 1 minute more until fragrant.
  3. If using meat or shrimp, add it now and cook until browned and cooked through, about 5 to 7 minutes. If using eggs, push the vegetables to one side of the pan, add the eggs, and scramble them, then mix with the vegetables.
  4. Add the carrots or frozen vegetables and cook for 2 minutes.
  5. Add the cauliflower rice to the skillet. Cook, stirring often, for 5 minutes to allow excess moisture to evaporate.
  6. Stir in the soy sauce (or tamari), toasted sesame oil, ground ginger, and white pepper. Cook for 1 minute, mixing everything well.
  7. Taste and adjust seasoning if needed. Garnish with sliced green onions before serving.

Notes

  • For a gluten-free version, use tamari instead of soy sauce.
  • If you prefer a milder flavor, use frozen cauliflower rice straight from the freezer without thawing.
  • To mimic takeout flavor, add a dash of fish sauce with the soy sauce.
