Ingredients

Scale
  • 2 cups cooked, shredded chicken (rotisserie works well)
  • 6 slices bacon, cooked and crumbled
  • 1 cup cherry tomatoes, halved
  • 1/2 cup shredded iceberg lettuce
  • 1/4 cup finely chopped celery
  • 1/4 cup mayonnaise
  • 2 tablespoons sour cream or Greek yogurt
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon onion powder
  • Salt and black pepper to taste

Instructions

  1. Place the shredded chicken in a medium bowl.
  2. Add the crumbled bacon, halved cherry tomatoes, shredded lettuce, and chopped celery to the bowl with the chicken.
  3. In a separate small bowl, whisk together the mayonnaise, sour cream or yogurt, Dijon mustard, and onion powder until smooth.
  4. Pour the dressing over the chicken and vegetable mixture.
  5. Gently fold all ingredients together until the chicken is evenly coated. Do not overmix.
  6. Season with salt and pepper to your preference.
  7. Serve immediately or chill for 30 minutes to allow flavors to combine.

Notes

  • For a lower-carb option, serve this salad stuffed into crisp lettuce cups instead of on bread.
  • If you prefer a tangier flavor, add 1 teaspoon of pickle relish to the dressing mixture.
  • This salad keeps well in the refrigerator for up to three days when stored in an airtight container.
