4 cups fresh or frozen blackberries
1 cup granulated sugar, divided
1 cup water
1 tablespoon lemon juice
1 1/2 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
1/2 cup milk
4 tablespoons cold butter, cut into small pieces
Instructions
Combine blackberries, 1/2 cup of the sugar, water, and lemon juice in a large saucepan. Bring to a simmer over medium heat. Cook for 5 minutes, stirring gently.
While the berries simmer, prepare the dumpling dough. In a medium bowl, whisk together the flour, baking powder, and salt.
Cut in the cold butter using a pastry blender or your fingers until the mixture resembles coarse crumbs.
Stir in the milk until just combined to form a soft dough. Do not overmix.
Drop the dough by small spoonfuls (about 1 teaspoon each) directly onto the simmering berries and syrup. Do not crowd the dumplings; leave space between them.
Cover the saucepan tightly and reduce the heat to low. Cook for 15 minutes without lifting the lid. The dumplings will steam and cook through.
Remove the lid. In a small bowl, mix the remaining 1/2 cup sugar with 2 tablespoons of water to make a thin glaze. Gently pour this over the dumplings and berries.
Simmer uncovered for 2 more minutes until the syrup thickens slightly.
Serve warm, spooning the syrup and berries over each serving.
Notes
Serve immediately with a scoop of vanilla ice cream for a classic experience.
If using frozen blackberries, do not thaw them before adding them to the pot.
For a richer syrup, you can substitute half of the water with unsweetened apple juice.
