You can make the best classic deviled eggs for your next party or holiday gathering. This easy recipe guarantees a perfectly creamy and tangy filling every time, making it a foolproof crowd-pleaser.

  • 1/2 cup mayonnaise (use full-fat for best texture)
  • 2 teaspoons Dijon mustard
  • 1 teaspoon white vinegar
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Paprika, for garnish
  • Optional: 1 tablespoon sweet pickle relish or a dash of pickle juice

Instructions

  1. Place the eggs in a large saucepan and cover them with cold water by about one inch. Bring the water to a full, rolling boil over high heat.
  2. Once boiling, immediately remove the pan from the heat, cover it, and let the eggs stand for exactly 12 minutes. This timing helps prevent the green ring around the yolk.
  3. After 12 minutes, drain the hot water and immediately cover the eggs with ice water to stop the cooking process. Let them cool completely, about 10 minutes.
  4. Peel the cooled eggs. For easier peeling, gently tap the shell all over and roll the egg on the counter to loosen the shell before peeling under cool running water.
  5. Slice each egg in half lengthwise. Gently scoop the yolks into a medium bowl. Place the empty egg white halves on a serving platter.
  6. Mash the yolks thoroughly with a fork until they are completely smooth. You want no lumps for that creamy texture.
  7. Add the mayonnaise, Dijon mustard, white vinegar, salt, and pepper to the mashed yolks. If you are using relish or pickle juice, add it now.
  8. Mix everything together until the filling is completely smooth and creamy. Taste the filling and adjust salt or mustard as needed.
  9. Spoon or pipe the yolk mixture back into the egg white halves. Piping creates a nicer presentation for parties.
  10. Garnish each deviled egg with a light sprinkle of paprika. Chill for at least 30 minutes before serving for the best flavor.

  • For foolproof peeling, add a teaspoon of baking soda to the boiling water.
