You need a simple, healthy snack or breakfast cookie? These chewy banana oatmeal cookies use only three ingredients. They are naturally sweet, flourless, and perfect for using up ripe bananas.

  • 3 very ripe medium bananas
  • 2 cups rolled oats (old-fashioned oats work best for chewiness)
  • 1 teaspoon ground cinnamon (optional, but recommended for flavor)

Instructions

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a medium bowl, mash the ripe bananas thoroughly until they are smooth and creamy. You want very few lumps left.
  3. Add the rolled oats and cinnamon (if using) to the mashed banana. Mix everything together until the oats are fully coated. The mixture will be thick.
  4. Drop rounded tablespoons of the mixture onto the prepared baking sheet, spacing them about 2 inches apart. These cookies will not spread much.
  5. Gently flatten each mound slightly with the back of a spoon or your fingers to form a cookie shape.
  6. Bake for 12 to 15 minutes, or until the edges look set and slightly golden. For chewier cookies, err on the side of underbaking slightly.
  7. Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

Notes

  • Use very ripe bananas; the riper they are, the sweeter your cookies will be, reducing the need for added sugar.
  • For a slightly different texture, you can use quick oats, but rolled oats provide the best chewy texture for this recipe.
  • If you want to add mix-ins like chocolate chips or nuts, add about 1/2 cup after mixing the main ingredients.
  • These cookies are naturally gluten-free if you use certified gluten-free oats.
  • Store leftovers in an airtight container at room temperature for up to 3 days.
