Loaded Twice Baked Potato Casserole

A creamy, cheesy baked potato casserole featuring bacon and cheddar, perfect as an easy comfort food side dish.

Ingredients

  • 4 lbs russet potatoes, scrubbed
  • 1 cup milk
  • 1/2 cup sour cream
  • 1/2 cup unsalted butter, melted
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cups shredded sharp cheddar cheese, divided
  • 1 cup cooked bacon, crumbled
  • 1/2 cup chopped green onions
  • 1/2 cup ranch dressing (optional)

Instructions

  1. Preheat your oven to 375 degrees Fahrenheit. Lightly grease a 9×13 inch baking dish.
  2. Prick the potatoes several times with a fork. Bake directly on the oven rack for 50 to 60 minutes, or until easily pierced with a knife.
  3. Allow the potatoes to cool slightly, then slice them in half lengthwise. Scoop the flesh out of the skins into a large bowl, leaving about 1/4 inch of potato in the skins. Set the skins aside.
  4. Mash the potato flesh thoroughly. Add the milk, sour cream, melted butter, salt, and pepper. Mix until smooth and creamy.
  5. Stir in 1 1/2 cups of the cheddar cheese, all the crumbled bacon, and the green onions into the mashed potato mixture. If using, mix in the ranch dressing now.
  6. Spoon the potato mixture evenly back into the reserved potato skins. Place the filled skins into the prepared baking dish.
  7. Top the filled potatoes with the remaining 1/2 cup of cheddar cheese.
  8. Bake for 20 to 25 minutes, or until the cheese is melted and bubbly and the casserole is heated through.

Notes

  • You can prepare this casserole ahead of time. Cover and refrigerate up to 24 hours before baking. Add 10 minutes to the baking time if baking from cold.
  • For extra richness, substitute heavy cream for the milk.
  • Use a large baking dish if you prefer to scoop all the filling into the dish rather than refilling the skins.
