1 cup packed light brown sugar
1 large egg
1 teaspoon vanilla extract
1 cup unsweetened applesauce

For the Glaze: 1/2 cup powdered sugar
1 tablespoon browned butter (cooled slightly)
1-2 teaspoons milk or cream
Instructions
Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
In a large bowl, cream together the softened butter and brown sugar until light and fluffy.
Beat in the egg and vanilla extract until just combined.
Mix in the applesauce until fully incorporated.
In a separate bowl, whisk together the flour, baking soda, salt, cinnamon, and nutmeg.
Gradually add the dry ingredients to the wet ingredients, mixing on low speed until a soft dough forms. Do not overmix.
Drop rounded tablespoons of dough onto the prepared baking sheets, spacing them about 2 inches apart.
Bake for 10 to 12 minutes, or until the edges are set and lightly golden. The centers should still look soft.
Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
To make the glaze, whisk together the powdered sugar, cooled browned butter, and milk until smooth. Add milk slowly to reach your desired drizzling consistency.
Drizzle or spread the glaze over the cooled cookies.
Notes
To brown the butter, melt the butter in a light-colored saucepan over medium heat. Continue cooking, swirling often, until the milk solids turn brown and the butter smells nutty. Remove from heat immediately and let cool before using in the glaze.
For extra moisture, use unsweetened applesauce. If you use sweetened, reduce the brown sugar by 1/4 cup.
You can substitute half the all-purpose flour with whole wheat flour for a slightly heartier texture.
